Hi lovelies! I hope you’re having a beautiful start to April! It’s been really lovely around here but between my allergies and the reintroduction of gluten in my life, I haven’t been feeling too hot. š¦ Because of that, though, I have been trying to find some more easy and delicious food combos that don’t leave me feeling so gross. This stuffed date recipe, as showcased in the title, is honestly a perfect combo of quick and easy and also super delicious! I have never really been a big fan of dates but I was just experimenting a little bit the other day and discovered (well, turns out they are already a thing…so I guess I’m not a pioneer in the date stuffing world) a way in which I will happily eat them; so I figured I would share with you and hopefully, maybe, some of y’all will enjoy them, too!
Sunbutter Stuffed Dates
Makes about 10Ā
IngredientsĀ
- Medjool Dates
- 1 Jar Sunflower Seed Butter (I usually just home make mine but I didn’t have the time this weekend so I just used Trader Joe’s brand)
Directions
- Slice dates in half and carefully remove pit
- Fill each date with sunbutter (about 1/2 tsp should fit in each date)
- Optional: Sprinkle a pinch of sea salt, cinnamon, or sweetened coconut shavings on top (Each are incredible additions in their own way!)
- Enjoy immediately!
I cannot reiterate how delicious these are, you guys. Ā I have been happily munching on them over the past few days and I seriously can’t get enough.
