Hi lovelies!
I hope you are doing so very well today! I have actually had a very pleasant week thus far, given the fact that mostly everyone I know is on a beach vacation and I am stuck at home, working my life away….despite that, I am excited and hopeful for the remainder of this week to follow suit & not suck too much.
I thought it might be fun today to discuss with you what I eat in a day!
Now, this is definitely not what I eat every day…nor really even what I eat that often but this is just one day in my world of food adventures (and it was a reaaaally good day for me and my stomach!)
I began the day with a delicious bowl of overnight oats (just oats and coconut milk in a jar in the fridge overnight–it’s a beautiful thing). I added some roasted and unsalted sunflower seeds to add a little good fats to my dish, along with some raisins and some dried cranberries. This was an absolutely beautiful addition to my morning coffee!
For lunch, my boyfriend and I went and tried out BOX Nashville….if y’all live in the Nashville area, promise me you’ll go check it out one of these days. Everything that they have looks incredible and this smoothie bowl did not disappoint one bit! It was made entirely of fruity goodness and MAN, I have wanted to eat this just about every single day since. I left feeling so pleasantly full, which is always what I’m looking for, I hate feeling stuffed and heavy after a meal.
For dinner, I FINALLY ate a dairy-free Reuben and y’all, it was incredible…we had talked about having them for a few weeks prior to this night, so my taste buds were SO ready for this to happen. We made them with toasted pumpernickel bread, sauerkraut, corned beef, and a homemade thousand island dressing. I just cannot wait to eat this again!!
In addition…
I thought it also might be fun to discuss with y’all my daily-ish (in my dream world it would be daily) workout routine.
I try to switch things up a little bit and not do the same workout every day, just so I get the chance to make sure I’m using different muscles and giving the muscles I worked the day before a little bit of a rest. With that being said, this is an idea of what a weekly workout looks like for me:
- Monday–1 hour biking session on stationary bike.
- Tuesday–30 minute Firm workout (aka the most quality 80’s workout video ever)
- Wednesday–I have Bible study this night most weeks, so I usually take a rest day, other than maybe taking my dog for a walk or something else low-impact.
- Thursday–1 hour biking session on stationary bike.
- Friday–quick 20-30 minute run after work.
- Saturday–this is the day I have the most freedom to do whatever kind of workout I want to, if it’s nice, I always try to make sure I do something outside, like a long slow run or a nice morning hike.
- Sunday–I again usually use Sundays as my full rest days. I will go for a small hike or a walk with my family after dinner, but definitely nothing too intense.
I am actually semi-considering running the Nashville half marathon this next year…so these workouts should be a little more intense and less lame in the weeks to come, and also will hopefully be more of an outside-based workout.
