Hi lovelies!
Since we’re in the throes of the bleak midwinter–a term perfectly coined by Christina Rossetti–I wanted to do a little more of a cozy post to start this week off. And for me, nothing is cozier than a day in front of the fire, with a hot cup of coffee/tea, a good book to read, and a big pot of soup on the stove.
I know many people find comfort in sweets or greasy foods, which I TOTALLY don’t blame you for haha. I’m a bit of a savory/salt-craver any day of the year but especially when it’s chilly outside, (or when sickness is on the rise—aka winter!) soup is my ultimate comfort food.
So with that in mind, here are a few recipes that are the same as (if not very similar to) the soups we make when we’re home and we’re cold and sad during the colder months 😛 :

Paleo Split Pea Soup

Munch on some nachos made with vegan cheese–delish! I know the corn chips make this less than paleo compliant but hey, the combo is TO. DIE. FOR. Seriously, as kids my mom would bribe us with nachos so we’d eat this soup haha. Now I love the soup, so the nachos are just an added bonus!

For the fat, I would probably recommend using trusty ol’ coconut oil. That’s always my go-to and it works wonders in just about any food out there.

I have yet to try this specific recipe but you can’t really go wrong with tomato soup, can you? Again, if you’re feeling like bending the rules a little bit, why not make a little vegan grilled cheese in addition to your warm bowl of soup?? YES PLEASE.

Paleo Black Bean and Lentil Soup

I know, again, beans and lentils aren’t 100% completely paleo-compliant for some. My doctor told me to keep eating them, while doing paleo, just because I can’t do any kind of nut or soy for protein. So, depending on how strictly you are doing this diet, this is a great soup option!

Paleo Olive Garden Minstrone Soup (copycat recipe)

Obviously for this recipe to be entirely paleo-compliant you’d have to substitute the noodles for something like cabbage or squash, which I think would be a delicious addition to this recipe. Also, again with the beans….not totally necessary for this recipe, if you’re strict paleo but they are delicious and a great source of protein, if you can eat them.

Of course we had to go with a classic here! I think most chicken noodle soup recipes are paleo compliant but this specific one looked REALLY yummy and included a few things I wouldn’t have thought to put into my classic-style soup….including fish sauce and aminos!? I’m so intrigued. So, I’m definitely going to try this recipe out this winter!

*For any of you wondering, my answer was then and will always be broccoli cheddar because YUM. And also because I obviously had to choose a soup with a bunch of cheese in it–my name is Bri for crying out loud!
