Hi lovelies!
Welcome back to my little corner of the internet 🙂 Sorry I’ve been MIA for the last week. If you follow me on Instagram (and because of the title of this post!), you already know that I took the last week off from work and along with that, I decided to not post anything on social media for that time, either, including here on the blog. I just needed a little bit of a break. I’ve actually been considering taking the whole month of April off from social media…and the blog…just to really give myself some time to be away from it. If I do that, it’s not because I don’t like y’all or anything, I promise! I’ve just been feeling the inkling to do it and am starting to think it might just about be time to make it happen.
However, before I fully take that plunge, I want to finish this month out strong. Starting with this (hopefully) fun post, documenting a little bit about what I did this last week with all the extra time off!
Since I’ve been out of school for nearly the last 2 years, it’s been a minute since I’ve had a break, especially one that lasted a whole week so this past week felt kinda like my own adult spring break, which seriously was like the best thing ever haha!

Saturday 3/3
This lovely Saturday I hung with my boyfriend all day–and seriously can I just say, we haven’t had a full Saturday to spend the whole day together since probably college and it was actually the sweetest thing of my whole life. We went to the Gulch and then 12 South neighborhood and walked around all day. It was SO BEAUTIFUL OUTSIDE! We then went back to my house and made us and my family dinner–we made black bean and quinoa hamburgers and sweet potato fries, which were super yummy and then made up a few bowls of popcorn to finish out our evening of loveliness spent together. LOOK AT THIS HAPPY FACE. Today was such a good day.
Sunday 3/4
I began this Sunday going to church with my boyfriend and one of my college bffs, Bailey. After church, we all went and ate some Chipotle for lunch and just enjoyed a little hang time together. Bailey had to leave us after lunch but Curtis and I didn’t have anywhere to be so we ended up just going back to his home and spent a good chunk of the afternoon outside because it was perfect, going for a walk and tossing around a football. We then went back to my home and made some Einkorn flour bread! Which is very random haha but it actually tastes like whole wheat matzos, which was actually my favorite thing ever. After baking, instead of doing our normal family dinner, we just ate some leftovers from the night before and sat and watched some movies before he left to go back home and I konked out for the night.
Monday 3/5
Today I cleaned all day. Like literally, ALL day. I used today as my serious spring cleaning day and I felt so accomplished when nighttime came around. It rained all day, so it was so perfect to be inside for most of the day. For dinner we ate vegan pesto with pasta which was so delicious and then we watched Family Feud….aka the best nighttime routine, ever??? Yeah, I think so.
Tuesday 3/6
Today was day #2 of cleaning! I finished up a bunch of the last minute things I didn’t get to knock out on Monday; including laundry. After my morning of cleaning, my sister and my mom and I all went for a nice long walk because it was BEAUTIFUL outside and perfect for a little afternoon stroll. Once we came back home, I sat outside and read the Bible a little bit on our front porch, too. I also made up some pecan “pie” Larabars this afternoon and y’all, I’m 100% putting the recipe up on the blog someday soon because YUM. They were so good…peep that picture below. They were as delicious as they look. I promise. Finished out my night by Facetiming my boyfriend. 🙂
Wednesday 3/7
Spent my whole morning reading! I’ve been reading the Shack Revisited by C. Baxter Kruger…woof. This book is chalk full of SO MUCH BIBLICAL TRUTH, MAN. I’ve talked about it on the blog before but that was a few months ago (lol apparently it takes me awhile to read a book) but y’all, even if you aren’t a fan of the original Shack book, read this one! I think it gives a new side to the discussion that a lot of people missed when they read the book originally. I then spent my evening by first taking my sweet pup for a walk and then by making dinner for my family. My boyfriend also came over again and partook in our dinner. I made a big salad with roasted chickpeas, roasted cauliflower and onions, with a lemon-tahini dressing. And grapefruits lol. The grapefruits are random, yes, but they actually complimented the meal fairly well. Also Curtis had never had a grapefruit before (WHAT) so this was a momentous night for us all.
Thursday 3/8
IT SNOWED! Nashville weather is funny like that in March. Snow one day, torrential downpours another day and the 70 degrees and sunny the following day. It definitely keeps us on our toes haha. Today was SUCH a fun day, guys. I spent the morning grocery shopping with my mom. I love grocery shopping…and I love my mom…so basically a win-win there for me. After we finished our morning shopping we stopped by The Honeysuckle, which is a little southern style restaurant in Cool Springs. I got the Roasted Vegetable Plate and I cannot even begin to tell you how good it was! We got a few more groceries after lunch and then came home and went for a very chilly walk because y’all know snow on the ground usually means v cold outside. We came home and I cleaned my bathroom and then we had some dinner. This was one of the most fun days spent with my mama I’ve had in a long time. 🙂 So happy!
Friday 3/9
This morning I job searched a little bit and then met a friend for juice/acai/good chats at the Franklin Juice Co. Curtis came over after I got back home and we decided to go back to Franklin and walk around a bit! We also decided to take my puppy, Sadie, so we made lots of friends on our little downtown walk. Sadly, she got SUPER dirty along the way so we came home and I immediately gave her a vinegar bath, then we all ate some spaghetti and spent our night lounging…all while wearing probably my new favorite outfit that I’ve worn in a long time (pictured below)….UGH. LOVE IT.
Saturday 3/10
Today was a total lounge day. Curtis had to work so I basically just hung around with the family all day. I took my pup for a nice morning run because it was again lovely outside (this weather!) I spent literally my whole afternoon, after helping my dad with the book he is writing, watching movies. Made my sister and myself some taco salad for dinner and popped some popcorn obviously…as we watched more movies. I love lounge days.
Sunday 3/11
Began this Sunday again at church! However, this week I got to work with all the little kiddos! Such a fun experience, seriously…they are such high-energy beings but SO SO fun to spend some time with every now and then. After church Curtis and I went to lunch with his family who are in town–we went to Frothy (no surprise there) and then I actually just came home. They needed to do a few things and I was actually feeling pretty crummy. Once I was home, I literally laid on the couch all night, ate some soup and watched Disney movies (lol). I’m the poster child for the ultimate sick kid.
Monday 3/12
It snowed again! This weather is so funny. I actually planned to be at work today but I’m full on sick. 😦 Thought I might include it in here since technically it was another day off (day 10! AH). Seeing as I was sick, though, I was quite boring today haha I lounged around all day, slept a lot, watched a lot of TV & movies (the classic sick day stuff!) and then finished my evening by seeing Curtis’s family again before they left town!
And just like that, it’s back to work we go!
